For our first recipe, we’ll be creating grilled shrimp tacos with pineapple salsa, and pairing them with a Sauvignon Blanc from Paso Robles.

Now let’s get onto the recipe!

 Grilled Shrimp Tacos with Pineapple Salsa and Avocado:

Ingredients:

  • 1 lb. large shrimp, peeled and deveined
  • 1 tsp. chili powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. olive oil
  • 8 small corn tortillas
  • 1 ripe avocado, sliced

For the Pineapple Salsa:

  • 1 cup fresh pineapple, diced
  • 1/2 red onion, diced
  • 1 jalapeño pepper, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. Preheat grill to medium-high heat. Rinse and pat dry the shrimp. In a small bowl, mix together the chili powder, garlic powder, salt, and black pepper. Add the shrimp to the bowl and toss them with the spice mixture until they are evenly coated. Drizzle the olive oil over the shrimp and toss again to coat. Thread the shrimp onto skewers and grill for 2-3 minutes on each side, or until they are pink and opaque.

  2. While the shrimp is grilling, prepare the pineapple salsa. Cut the fresh pineapple into small, bite-sized pieces. Dice the red onion and jalapeño pepper, and chop the fresh cilantro. Combine all of these ingredients in a medium-sized bowl. Squeeze fresh lime juice over the pineapple salsa, and then stir everything together until it is well combined. Taste the salsa and adjust the seasoning as needed with salt and pepper.

  3. Warm the corn tortillas on the grill for about 30 seconds on each side. This will help them become slightly charred and crispy.

  4. To assemble the tacos, place 2-3 shrimp on each tortilla. Top the shrimp with a generous spoonful of pineapple salsa and a few slices of avocado. Fold the tortilla in half and serve immediately.
